★ ★ ★ ★ ★ 맛있는 숙성 돼지고기와 숙성 한우를 합리적인 가격에 맛볼 수 있는 곳. 무쇠불판은 기름이 많이 튀긴 했지만 숙련된 솜씨로 맛있게 고기를 구워주심. 흑돼지 모듬은 일찍 품절 되는 것 같음. 소고기 먹을 때 주시는 소스들도 맛있음. 와인 한병은 콜키지 무료 그 후로 병당 2만원인데 별도로 와인이 매장에는 준비되어있지 않아서 아쉬웠음. 그래도 신나게 고기에 소주 때리고 갑니다!!

대한민국 최고라 불리는 정육마스터가 운영하는 업장이다.
한우삼겹 150g(21,000)
신사목고기 180g(16,000)
약방주물럭 200g(14,000)
숙성육의 대가라고 불리지만 고기맛만 좋은게 아니다.
반찬 하나하나의 디테일이 담겨있다. 다진 낙지젓갈, 된장소스, 멸치가루소금과 가장 좋았던 고수가 들어간 육장소스와 샐러리장아찌!
붉은 조명 아래 특수제작한 불판이 어우리지면 고기가 익는 장면은 한편의 연극이어라.
한우 삼겹살은 한우 업진살 부위를 얇게 썰어낸 부위로 고소한 풍미와 감칠맛으로 인해 쥐도 새도 모르게 사라졌다ㅋㅋ 목고기 또한 참된 숙성으로 인해 부드러운 식감에 감탄스럽다.
뒷다리로 주물럭을 만들어 낸 약방 주물럭은 놀랍다.
업자들에게는 항상 고민거리인 뒷다리로 상품 가치를 높인 것에 감격을 느낀다.
마무리로 은박에 조리 되어 나온 대파볶음밥도 고기와 함께 먹으니 만족스러운 식사가 되기에 아주 좋다.
아쉽게도 한정 판매인 숙성스페셜은 주문하지 못하였지만 재방문 각이기에 그때 한번 더 맛보아야겠다.
그 외에 육개장, 흑돼지곰탕도 히트 상품이 될 것같다.

Yakbang Jumuluk, which made Jumulruk with its hind legs, is amazing.

★ ★ ★ ★ ★ 쉐프들의 쉐프인 최정락쉐프님께서 오픈한 신상 고기집입니다. 기본 소스는 총 4가지가 나오고 반찬은 6종류가 나오는데 하나하나 정말 신경 많이 쓴게 느껴질 정도로 먹음직스럽고 맛있습니다. 고기는 4종류가 있는데 목고기는 목살이며 당귀를 함께주고 우삼겹에는 숙주를 같이 줍니다. 주물럭은 돼지 앞다리살로 양념을 했고 숙성스페셜은 한정인데 누룩균 이용해서 만든 숙성육을 맛볼 수 있습니다. 정말 하나하나 다 너무 맛있고 고기는 이런거라고 말한만큼 완벽합니다. 오픈한지 얼마 안되었지만 인기가 많다보니 6시 넘으면 웨이팅 각오 하셔야하며 테이블링 설치되어 있습니다. 고기 구워주시면서 설명해주시는 모든 분들 다 친절하고 유머감각이 있어서 더 좋았습니다.

고기 컨설팅 전문가 최정락 셰프가 운영중이며 고기 마스터 JL로 불리운다는 그가 대표적으로 컨설팅한 곳이 몽탄.
돼지고기 소고기 모두 선택 가능하며 모든 고기가 숙성육으로 고기 특성에 따라 드라이에이징 또는 웻에이징 방식으로 숙성 됐다고.
숙성육인지라 맛은 조금 더 풍부하나 약간 느끼할수 있으며 온라인 마케팅을 참 잘함.
마지막으로 먹은 해장술밥이 이집의 최고 시그니처 메뉴인듯.
