★ ★ ★ ★ ★ 평점 5점짜리 음식을 먹은게 얼마만인가?
난 왜 이런 가게에 웨이팅이 없는지 모르겠음.
첨에 피자 한판을 33,000원 주고 먹을라니 정신이 혼미했음. (막상보면 사이즈가 장난아님....)
샐러드는 최애 치즈 리코타 샐러드를 시키려 했는데 서버분 왈
“리코타를 오늘 못만들어서요...”
여기서 갑자기 상승하는 기대감. 리코타를 직접 만든다고????
페퍼로니와 슈프림을 하프앤 하프로 먹음. 어디식 피자냐고???
정통 이태리식, 시카고식, 뉴욕식, 디트로이트식 이딴거 따지는데 어차피 글로벌시대인데 무슨식이 중요한가? 맛만 있음 되는거임
1. 도우
도우는 워낙 잘하는 집이 많으니까 이게 뭐 별 차이 있겠어? 라고 할 수도 있는데, 화덕피자 특유의 그을음과 바삭하면서도 쫄깃한 맛이 진짜 괜찮음.(여기가 화덕을 쓰는지는 확인되지 않음 ㅋㅋㅋ)
그 반증으로 피자를 먹을때 턱이 아프다거나, 재료들이 빵과 분리되어 씹다보면 빵만 입안에서 질겅질겅 거린다던가... 이런 일이 없었음.
2. 소스**
소스가 이집 피자맛의 5할이라고 생각함.시판용 소스는 절대 아님. 이런맛이 날라면 무조건 사람손을 탈 수 밖에 없음. 피자소스가 피자맛을 미친듯이 끌어올림. 여담이지만 피자위에 올리브오일을 뿌려주는거 같은데, 이런 디테일이 피자를 서빙부터 마지막 조각을 입에 넣을때까지 촉촉하고 부드럽게 유지시켜줌. 크림베이스가 궁금하다가도 다시가면 그냥 토마토 베이스로 먹을듯...
3. 치즈
내가 업장에서 사용하는 치즈의 유통구조에 대해 알턱이 없지만, 먹어보면 타 업장보다 좋은 치즈인건 확실함. 서빙 직후 “아... 치즈 토핑하고 싶다”라고 생각했는데 그건 그냥 기우였음. 치즈랑 토마토 소스를 따로 먹는게 아니라 토마토 소스맛 치즈를 먹는 느낌.
4. 부재료**
토핑도 보면 정말 신경 많이 쓴다는것을 알 수 있음. 맛있는 피자집을 하겠다고 살리미(페퍼로니)를 직접 만들수는 없는 노릇이니 차치하고, 슈프림에 들어간 고기가 있는데 그 고기를 자세히 보고 먹어보라. 시즈닝에 코리엔더? 펜넬? 추정되는 씨앗이 있는데, 씹을때마다 이국적인 맛이 톡톡 튀는게 디테일을 참 잘 살림. 타코 맛 좋아한다면 도전!!
재미난점은 걍 양파가 아니라 캬라멜라이징 된 양파가 올라가 있는데, 많은양이 아닌데도 이게 맛의 풍미를 기가막히게 올려줌. 단짠단짠~~난 이게 의도치 않은 오버쿡인줄 알고 메뉴판을 봤는데, 진짜 카라멜라이즈드 양파라고 적혀있었음. 이런 디테일때문에 더욱 손님으로써 만족스러움.
슈프림 토핑은 공통토핑이 있고 옵션으로 파인애플과 엔초비중 고를수가 있는데 일행들이 엔초비를 못먹어서 파인애플을 시켰음. 엔초비는 꼭 도전해봐야겠음. 아마 내 다음 리뷰분이 엔초비 리뷰를 남겨주실꺼라 믿음.
5. 카프레제 샐러드
카프레제는 그냥 좋은 치즈와 야채가 전부라 특별할게 없지만, 반대로 말하면 그 모든 재료들이 신선해야 만족감을 얻음. 루꼴라와 바질도 싱싱하게 잘 서빙되어 만족스럽게 먹음.
나도 파스타는 꽤 만드는 편이라 파스타는 굳이 안시켰는데, 나중에라도 한번 꼭 도전해봐야겠음.
총평 : 가산동의 작은 이태원.

The first time I paid 33,000 won for a pizza, I was confused. (Actually, the size is no joke...)
The salad was my favorite cheese ricotta salad, but the server said
“I can’t make ricotta today…”
Expectations that suddenly rise here. Are you making your own ricotta?
Had pepperoni and supreme in half and half. Where's the pizza???
Authentic Italian food, Chicago style, New York style, Detroit style. It's just taste.

There are a lot of houses that do well, so what's the difference? It can be said that, the unique soot and crispy yet chewy taste of oven-dried pizza is really good. (It is not confirmed whether this place uses an oven lol)
As proof of that, the jaw hurts when eating pizza, or when the ingredients are separated from the bread and chewed, only the bread squeaks in the mouth... This never happened.
2. Source**
I think the sauce is 50% of the taste of this house's pizza. It's absolutely not a commercially available sauce. If it tastes like this, you can't help but get someone's hand. The pizza sauce makes the pizza taste crazy. As an aside, it's like sprinkling olive oil on the pizza, and this detail keeps the pizza moist and soft from serving until you put the last slice in your mouth. I was curious about the cream base, but when I go back, I think I'll just eat the tomato base...
3. Cheese
I don't know much about the distribution structure of the cheese I use at the business, but if I try it, it's definitely a better cheese than other businesses. Immediately after serving, I thought, “Ah… I want a cheese topping,” but that was just a fallacy. Instead of eating cheese and tomato sauce separately, it feels like eating tomato sauce flavored cheese.
4. Sub materials**
If you look at the toppings, you can see that they really care a lot. Aside from that, you can't make salimi (pepperoni) yourself to make a delicious pizza place. There is meat in the Supreme, take a closer look at the meat and try it. Coriander for seasoning? fennel? There are presumed seeds, and the exotic flavor pops out every time you chew, which makes the details really good. If you like the taste of tacos, try it!!
The interesting thing is that it is not just an onion, but a caramelized onion topped with it, and although it is not a large amount, it wonderfully enhances the flavor of the taste. Sweet salty sweet salty~~ I thought this was an unintentional overcooking, so I looked at the menu, and it said that it was a real caramelized onion. Because of these details, I am more satisfied as a guest.
Supreme toppings have a common topping, and you can choose between pineapple and anchovies as an option, but my party couldn't eat anchovy, so I ordered pineapple. Anchovy must try. I believe that my next reviewer will probably leave a review of Anchovy.
5. Caprese Salad
Caprese is nothing special because it's just good cheese and vegetables, but in other words, you get satisfaction when all the ingredients are fresh. Arugula and basil were also served fresh and satisfactorily eaten.
I'm pretty good at making pasta myself, so I didn't have to order pasta, but I'll have to try it again later.
Overall Review: A small Itaewon in Gasan-dong.

★ ★ ★ ★ ★ Let me tell you about the best pizza place in Seoul and do I dare say it........Korea!
If you had ever visited Neighbourhoods in Sinchon then you would have eaten the amazing pizza made by the old owner and chef Stafford Granger with his lovely wife who takes care of the front of the restaurant. At the start of the new year they sold Neighbourhoods to a new owner and have opened up this restaurant at a new location.
Sarah's Pizza Pub is the name of their new location and having learned that Stafford and his wife had a new restaurant we had to go see them and eat their amazing pizza and drink some good craft beers.
The interior of the restaurant is really welcoming and a really nice atmosphere set out for a good time of eating and drinking. We learned that Stafford has changed his dough recipe and went to San Francisco to learn how to make a wet dough base for his pizza which is great to see that he is always trying to perfect his own pizza and going and learning a new technique of pizza dough making is very impressive.
We ordered the half and half pizza and were glad to see they had our favourite pizza, "Meat Lovers" and we were recommended to try a new pizza called, "Sarah's Pizza". To go with the food there is a great selection of craft beer from a Korean brewery called The Ranch so we got some delcious beers to go with our pizza.
The Meat Lovers pizza comes topped with pepperoni, Italian sausage which are all home made and tastes simply amazing, as well as olives and green peppers and the tomato sauce is also home made. What I really love about the pizza is that they will make as much of the ingredients home made which gives you an all together better taste and quality so you know you're eating good food.
The 2nd half of the pizza was Sarah's Pizza which comes with pepperoni, Italian sausage, riccota cheese which is also home made, parmesan cheese and basil. This was a wonderful pizza with the home made riccota adding a nice creamy element that married well with the sausage and pepperoni and definitely a winner.
I mentioned before that the dough recipe had changed to a wet dough and it was definitely a great pizza base that was soft and crispy. There were ample ingredients on the pizza and the base held itself well and isn't like a typical base you find at a local pizza joint, it is much better than that.
In my opinion this is the best pizza place in Seoul that you should go out of your way to visit. ?
