★ ★ ★ ★ ★ 좋은 스시집에 갈 때마다 오디오 매니아였던 선배가 떠오른다. 그 선배는 원자력발전소의 전기와 화력발전소의 전기로 오디오를 들을 때 음질이 다르다고 말한 적이 있다. 원자력발전소의 전기로 들을 때 더 선명하지만 건조하다고 했다. 그런 얘기를 들을 때마다 농담인지 진담인지 구분이 안 돼서 당황하곤 했다. 스시집에서도 그런 당황을 느낄 때가 종종 있다. 스시의 맛과 재료의 질을 섬세하게 구분하지 못하기 때문이다.
그런 면에서 이 가게는 직관적으로 맛있고 개성적이다. 스시의 맛도 재료의 신선함도 알기 쉽다. 우니를 달라고 하면 3개씩 넣어줄 정도로 시원시원하다. 나 같은 스시초보에게 딱 맞는 가게여서 자주 갈 예정이다.

★ ★ ★ ★ ★ 여기는 참치가 정말 정말 정말 맛있다. 뿌리와사비도 떫거나 걸레향나는 와사비가 아니라 맛있는 와사비를 골라서 쓴다. 전체적으로 네타도 신선하고 맛잇어서 기억에 남는다. 이곳은 좋은스시야다.

쉐프님이 약간 말걸기 어려워 보이시나 말문이 트이시면 설명도 잘해주시니 먼저 말을 걸어보는 것도 좋음
코스의 진행속도나 구성은 만족스러웠으며
샤리의 신맛이나 단맛 역시 너무 강하지 않았고
고등어 역시 비릿맛 하나 없이 좋았음
다만 새끼전갱이 튀김과 아나고에서 가시가 거슬릴 정도로 느껴져서 이건 아쉬움
