홍릉각은 경동시장에 있는 유니짜장을 전문으로 하는 중국음식점입니다. 여기 짜장면은 신선한 재료가 많이 들어가 있어 맛이 있네요. 하지만, 맛으로 보면 유니짜장과 유니간짜장이 나쁘지 않지만 최고라고 말하기에는 무리가 있는것 같고, 굳이 멀리서 찾아가서 먹을 맛은 아닌것 같군요. 서울에도 유니짜장을 더 맛있게 하는 노포 화교 중국음식점 있으니까요. 그리고, 고기튀김은 밀가루와 튀김가루 섞어 고기에 입혀 바삭바삭하고 맛이 있습니다. 여기서 원조홍릉각에서 말하는 육미짜장면은 보통 중국음식점의 유니짜장으로 메뉴가 되어 있지만, 원래는 육니짜장으로 '고기육'에 '진흙니'로 고기를 중화요리칼 '차이다오'로 다져 고기와 기름이 찐득찐득하게 만들어서, 짜장소스가 면에 최대로 많이 착 달라붙게 되면서 또 다른 맛을 느낄 수 있게하는 짜장면입니다.
Hongneunggak is a Chinese restaurant in Gyeongdong Market that specializes in uni-jajang. The jjajangmyeon here is delicious because it contains a lot of fresh ingredients. However, in terms of taste, uni-jajang and unigan-jajang are not bad, but it seems impossible to say that they are the best. There is a long-established Chinese restaurant in Seoul that makes Unijajang more delicious. And, the fried meat is crispy and delicious by coating the meat with flour and tempura powder. Here, Yukmi Jjajangmyeon, referred to in the original Hongneunggak, is usually on the menu as uni-jajang of Chinese restaurants, but originally, the meat and oil are minced with a Chinese cooking knife, Chaidao. Jjajangmyeon is made so that the sauce sticks to the noodles as much as possible, giving you a different taste.

작고 협소한 동네 노포집이지만, 점심시간에는 왠만하면 웨이팅이 걸리는 곳. 다진 고기가 가득한 육미간짜장과 탕수육이 대표 메뉴이다. 육미간짜장은 2인부터 주문 가능하고, 요리가 많아서 남으면 포장도 가능하다. 대파로 단맛을 낸 듯한 꾸덕한 부먹의 탕수육은 인생에 손꼽힐 정도로 맛있었다. 고기도 실하고, 개인적으로 케첩소스와 비슷한 느낌을 싫어하는데, 소스도 그렇지 않아서 아주 좋았다. 육미 간짜장은 너무 짜거나 자극적이지 않아서 계속 입에 들어가는게 신기했다. 더욱이 면도 별도로 숙성시키시는지, 끝까지 불지 않는 매력을 선사했다. 주말에는 주류 판매를 하지 않으니 참고 하시길. 노년의 쉐프님, 건강하게 오래오래 자리를 지켜주시길.
Although it is a small and narrow neighborhood long-established store, there is usually a wait during lunch time. The representative menu is Yukmi-ganjajang filled with minced meat and sweet and sour pork. Yukmi Gan Jjajang can be ordered from two people, and there are many dishes, so if there is leftover, you can take it out. The sweet and sour pork, sweet and sour with green onion, was so delicious that it was counted as one of the best in my life. The meat is thick, and I personally don't like the taste similar to ketchup sauce, but the sauce was not so good. Ganjjajang with Yukmi was not too salty or irritating, so it was strange to keep going in my mouth. Moreover, whether the noodles are aged separately or not, it gave the charm of not burning until the end. Please note that alcohol is not sold on weekends. Senior chef, please stay healthy and stay for a long time.

육미(유니)짜장이 유명한 집 입니다. 뭐랄까 요즘 공장같이 찍어내는 배달 짜장만 먹다 먹어 그런지 너무 맛있네요. 고기도 많이 들어가고 너무 달거나 너무 짠 것도 아니고 너무 기름지지도 않은 데다가 면에 장도 잘 붙어 수저로 끝까지 박박 긁어 먹엇습니다. 밥 생각 나더라고요. 진짜 요즘 중국집 생각하면 안되는 20세기에 홀에서 먹은 노포 중국집 느낌과 맛 이네요.
This is a famous restaurant for Yukmi (uni) jjajang. Somehow, these days, I only eat Jjajang made for delivery like a factory, so it's so delicious. It has a lot of meat, it's not too sweet or too salty, and it's not too oily. I thought of rice. It really has the feel and taste of a long-established Chinese restaurant eaten in a hall in the 20th century, which you shouldn't think of at a Chinese restaurant these days.

Me and my bff(biggest fan forever) had an delightful experience having premium ganjajang(간짜장) after waiting for like an hour. I am so grateful to my friend working in a team and supporting my decision coming to this restaurant starving in aware of waiting time. This place is a family-ran restaurant, a grandpa being the only chef, grandma being his supporter and son as a server. Their son is pretty adorable! He even served us free rice bowl seeing that we had a lot of remaining sauce after eating. Table next to us got charged a dollar for a rice bowl. Foreigner(외국인) privilege applicable place! My bff highly recommends other 외국인s to visit this place. So sad that the chef grandpa isn't as healthy as before being a chef for nearly 50 years that they only operate for 5 hours a day. Highly respect their passion about Korean Chinese food. Love you my bff.
