★ ★ ★ ★ ★ 그들은 일사분란하게 움직였다. 확신 할 수 없었지만 가족인 것 같았다. 가족이 아니고서야 그렇게 손발을 맞춰가며 일하기 힘들 것이다. 일요일에 방문하였고 점심에는 사람들이 몰려들었지만 거기서 일하는 사람들 중 당황하는 사람들은 없었다. 그저 묵묵하고 리듬감있게 움직였다.
고기가 나왔을 때 나는 고기를 이렇게까지 아름답게 자르는 이유가 있을까를 잠시 생각했다. 단순한 덩어리들이라고 생각할 수 있었지만 외부와 경계를 이루고 있는 선들은 분명 '먹음직스러움'을 품고 있었다.
불이 올라오고 고기를 올리고 적당히 익힌다음 아무 것도 곁들이지 않고 고기를 물어 씹었다. 고기에서 육즙이 나왔고 부드럽게 찢어졌다. 그런 음식을 먹을 때는 아무말도 안 할 수 있다. 그저 먹어야 한다. 그런 고기는.
양이 상당히 많았다. 실컷 소고기를 먹었다는 느낌이 들었고 다음날 아침까지 든든했다. 정말이다.
