주인아저씨 홍어 철학이 워낙 확실하여
처음가시는 손님은 약간 마음대로 하지않나 하는 느낌이 들 수 있으나 이해하고 받아주면 다 맞는 말씀이고 서비스도 잘 주십니다

삭힌홍어를 드시고 싶다면 이곳을 추천.
홍어음식에 대한 사장님의 열정이 느껴지는 집.
처음은 시키는데로 하셔야만 합니다.
즉 참 맛을 알고 먹으라는 깊은 뜻..
처음 삭힌홍어만을 소금 간으로만 50번정도 삼키지 말고 씹은 후 막걸리(탁주)와 함께 먹으라고 함..홍탁 (洪濁)
이것이 진정한 참 맛으로 삭힌 홍어의 톡 쏘는 맛과 탁주의 텁텁한 맛이 어울렸던 훌륭한 조합.
여러 외국산에 비해 비싸지만
배를 채우기 보단 음식의 철학.맛을 느껴 보세요

★ ★ ★ ★ ★ 흑산도 홍어는 TV에서 가끔씩 나와 익히 알고 있는 수산물중에 하나였고 보통 홍어무침 등으로만 먹고 홍어는 특유의 삭힘... 냄새로 별로 좋아하지 않는 음식중의 하나였는데 여기는 정말 사장님의 맛깔나는 홍어 설명과 즉석에서 홍어를 해체?하여 바로 테이블로 제공하는 쇼서비스를 비롯해 홍어 자체로도 신선하고 맛도 깔끔해서 너무 좋았습니다.
추가로 홍어의 각종 부위를(특히 애) 무료는 아니었지만 소정의 서비스료를 받고 맛볼수 있게 해주셔서 너무 감사했습니다. 조만간 한번더 가봐야겠어요. ㅎㅎ
